Chick Peas

Chickpea is the most important pulse crop in Ethiopia. The bulk of the crop variety in the country is dominated by the sweet Desi type, and the Kabuli type is also grown in limited areas. In Ethiopia chickpeas are consumed widely fresh as green vegetables, sprouted, fried roasted and boiled. Chickpeas in Ethiopia hold fourth in the production and area coverage in the total pulse category. The chickpea (Cicer arietinum) is a legume of the family Fabaceae, subfamily Faboideae. Its seeds are high in protein. It is one of the earliest cultivated legumes: 7,500-year-old remains have been found in the Middle East.Other common names for the species include garbanzo bean, ceci bean, chana, sanagalu, and Bengal gram.

Sesame Seed

In Ethiopia a large number of sesame seed varieties exist. The varieties that are well known are Humera Gonder and Wellega. The Humera variety is appreciated worldwide for its aroma and sweet taste. It is suitable for various bakery products. The Gonder type is also suitable for the bakery market. The major competitive advantage of the Wellega type is its high oil content. Sesame seed is considered to be the oldest oilseed crop known to man, domesticated well over 5000 years ago. Sesame is very drought-tolerant. It has been called a survivor crop, with an ability to grow where most crops fail. Sesame has one of the highest oil contents of any seed. With a rich nutty flavor, it is a common ingredient in cuisines across the world. Sesame, like other nuts and foods, can trigger allergy reactions in some people.


Ginger or ginger root is the rhizome of the plant Zingiber officinale, consumed as a delicacy, medicine, or spice. It lends its name to its genus and family (Zingiberaceae). Other notable members of this plant family are turmeric, cardamom, and galangal.

Aframomum Corrorima

Aframomum corrorima is a species in the ginger family, Zingiberaceae. The spice, known as korarima, Ethiopian cardamom, or false cardamom, is obtained from the plant’s seeds (usually dried), and is extensively used in Ethiopian and Eritrean cuisine. It is an ingredient in berbere, mitmita, awaze, and other spice mixtures, and is also used to flavor coffee. In Ethiopian herbal medicine, the seeds are used as a tonic, carminative, and laxative.

Turmeric (Curcuma longa)

Turmeric (Curcuma longa) is a rhizomatous herbaceous perennial plant of the ginger family, Zingiberaceae. It is native to tropical South Asia and needs temperatures between 20 °C and 30 °C (68 °F and 86 °F) and a considerable amount of annual rainfall to thrive.

Black cardamom

Black cardamom, also known as hill cardamom, Bengal cardamom, greater cardamom, Indian cardamom, Nepal cardamom, winged cardamom, or brown cardamom, comes from either of two species in the family Zingiberaceae. Its seed pods have a strong camphor-like flavor, with a smoky character derived from the method of drying.

Its seeds (each one contained within a fruit, which is dried) are used in the cuisines of many different cultures, in both whole and ground form. Cumin seeds resemble caraway seeds, being oblong in shape, longitudinally ridged, and yellow-brown in color, like other members of the Umbelliferae family such as caraway, parsley and dill.

Of the compounds found in the essential oil from cinnamon leaves, cinnamyl acetate, eugenol, and anethole, and in particular cinnamaldehyde, were found to have the highest effectiveness against mosquito larvae
